With regard to Australian consumers, the business began mass production of its sauce when it relocated to its 'state-of-the-art' new premises in March, 2002.

Already it has been given shelf-space by more than 150 retailers in NSW alone.

The I Love Salmon brand name, like its sister brand 'I Love Sushi', is rapidly becoming known to an ever more sophisticated and health conscious consumer market.

Salmon XO Sauce is an ideal consumer durable for a population highly sensitive to health, environmental and social issues.

The sophistication of consumer palates is also changing. For an increasingly large group of Australian consumers, basic food products are no longer sufficient in meeting their needs. Consumers are demanding greater variety, healthier options and have a desire to experience new ways of cooking and dining.

The GM debate has also made consumers more acutely aware of what they consume. And with it increased demand for healthy and organic foods.

Salmon XO Sauce, which has no preservatives and is made from all-natural ingredients, has exponential potential for 'sating' consumers in such a market.

Salmon is rich in Omega 3 - a substance that lowers the blood level of cholesterol, reduces high blood pressure, improves the body's circulation by minimising the occlusion of blood vessels and reduces the risk of coronary heart disease.

Working in consultation with the CSIRO the business developed a process to maximise the shelf-space of its XO sauce, and assuring all industry health and safety specifications were adhered to, and in some cases surpassed (approval by AQIS).
